Famed Sydney chef Tony Bilson was joined by French cooking superstar Serge Vieira at Our Big Kitchen…and supervised children producing biscuits for those affected by the Brisbane floods.

The visit had been planned well in advance with the pair of masterchefs preparing chicken cooked in vinegar and served on a bed of rice. It was to be a demonstration of their cooking skills with the pair willing to answer any questions from a very enthusiastic audience.

Vieri, Portuguese-born but now a French citizen, told J-Wire: “This is the first time I have every cooked a Kosher meal….and I had to deal with pareve margarine instead of butter when preparing the chocolate mousse dessert. It worked out perfectly”

But when the demonstration was over, Our Big Kitchen executive director Rabbi Dovid Slavin took the pair to another section of the kitchen where children were preparing biscuits to be baked and sent to the Brisbane community.

Rabbi Slavin plans for more cooking demonstrations in the future but it is unlikely that the Kitchen will have a guest of the calibre of Vieiri for some time. His eponymous restaurant in the Cantal in France has been awarded a prestigious red star by the Guide Michelin.

Both chefs were more than impressed by the children’s preparations…a sure sign that the biscuits will receive a warm welcome when they reach Brisbane.

Yummie! Can’t wait to share these. I’m sure our friends in Brisbane can spare a few for us further north.
Richard from Queensland, still flood effected.
